To je proces kojim se prirodno dobijena rakija, naj\u010de\u0161\u0107e iz kazana, razbla\u017euje destilovanom vodom kako bi se postigla optimalna ja\u010dina za konzumaciju i standardizaciju proizvoda. Iako na prvi pogled deluje jednostavno \u2013 \u201edodati vode dok ne bude kako treba\u201c \u2013 egalizacija zapravo zahteva pa\u017eljiv, stru\u010dan pristup. Pogre\u0161no izvedena egalizacija mo\u017ee dovesti do mutno\u0107e, gubitka arome ili \u010dak destabilizacije pi\u0107a.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Za\u0161to se radi egalizacija?<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Stabilizacija proizvoda:<\/strong> Prema pravilnicima i tradiciji, ve\u0107ina vo\u0107nih rakija namenjenih tr\u017ei\u0161tu standardizuje se na 40\u201345% vol. alkohola.<\/li>\n\n\n\n<li><strong>O\u010duvanje kvaliteta:<\/strong> Prejaka rakija (npr. 60% vol.) mo\u017ee biti o\u0161tra i neprijatna za konzumaciju, dok preslaba (ispod 35% vol.) gubi aromu i puno\u0107u.<\/li>\n\n\n\n<li><strong>Ujedna\u010denost serija:<\/strong> Egalizacija obezbe\u0111uje da svaka fla\u0161a iste vrste rakije ima identi\u010dnu ja\u010dinu, \u0161to je va\u017eno za brend i potro\u0161a\u010dko poverenje.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Kako se pravilno izvodi egalizacija?<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">1. Merenje ja\u010dine rakije<\/h3>\n\n\n\n<p>Prvi korak je ta\u010dno odre\u0111ivanje volumenskog procenta alkohola pomo\u0107u <strong>alkoholmetra<\/strong> ili <strong>digitalnog mernog ure\u0111aja<\/strong>. Merenje se obavlja na temperaturi od 20\u00b0C, jer odstupanja u temperaturi mogu zna\u010dajno poremetiti o\u010ditavanje.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">2. Kvalitet vode<\/h3>\n\n\n\n<p>Za razbla\u017eivanje rakije koristi se <strong>demineralizovana ili destilovana voda<\/strong>. Nikada se ne sme koristiti \u010desmova\u010da ili bunarska voda jer minerali i soli uzrokuju pojavu <strong>mutno\u0107e<\/strong> i naru\u0161avaju ukus. Voda mora biti mikrobiolo\u0161ki ispravna, bez mirisa i ukusa.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">3. Prora\u010dun odnosa rakije i vode<\/h3>\n\n\n\n<p>Ta\u010dan odnos odre\u0111uje se pomo\u0107u <strong>tablica za razbla\u017eivanje alkoholnih pi\u0107a<\/strong> ili specijalizovanih kalkulatora. Pravilo je da se uvek <strong>rakija razbla\u017euje vodom<\/strong>, a ne obrnuto \u2013 voda se polako dodaje u rakiju, uz stalno me\u0161anje.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">4. Tehnika dodavanja<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Vodu sipati postepeno i lagano, nikada naglo.<\/li>\n\n\n\n<li>Me\u0161anje vr\u0161iti drvenim ili inox \u0161tapom kako bi se masa ravnomerno ujedinila.<\/li>\n\n\n\n<li>Posle dodavanja vode rakiju ostaviti da \u201eodmori\u201c najmanje 2\u20133 nedelje (idealno i do 2 meseca). Tokom ovog perioda dolazi do tzv. <strong>spajanja vode i alkohola<\/strong>, \u0161to doprinosi harmoniji ukusa.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">5. Kontrola i stabilizacija<\/h3>\n\n\n\n<p>Nakon odmora, ponovo se meri ja\u010dina i proverava bistrina. Ukoliko je do\u0161lo do pojave mutno\u0107e, koristi se <strong>hladna stabilizacija<\/strong> (hla\u0111enje na nekoliko dana) ili <strong>filtracija<\/strong> kroz specijalne filtere.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Prakti\u010dan primer egalizacije rakije<\/h2>\n\n\n\n<p>Recimo da imamo <strong>10 litara rakije od 60% vol. alkohola<\/strong>, a \u017eelimo da je razbla\u017eimo na <strong>42% vol.<\/strong><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Formula za prora\u010dun<\/h3>\n\n\n\n<p>Osnovni princip je: <\/p>\n\n\n\n<figure class=\"wp-block-image 60%)<\/li>\n\n\n\n<li><strong>V1<\/strong> = po\u010detna zapremina (10 litara)<\/li>\n\n\n\n<li><strong>C2<\/strong> = \u017eeljena ja\u010dina (42%)<\/li>\n\n\n\n<li><strong>V2<\/strong> = zapremina koju \u0107emo dobiti posle razbla\u017eivanja<\/li>\n<\/ul>\n\n\n\n<p>Izra\u010dunavamo: <\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-full\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-block-heading\">Koliko vode treba dodati?<\/h3>\n\n\n\n<figure class=\"wp-block-image aligncenter size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"424\" height=\"58\" (max-width: 424px) 100vw, 424px\" \/><\/figure>\n\n\n\n<p>Potrebno je dodati <strong>4,28 litara demineralizovane vode<\/strong> u 10 litara rakije od 60% vol. da bismo dobili \u017eeljenih 42% vol.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Na\u010din primene<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Vodu dodavati postepeno, u nekoliko manjih porcija.<\/li>\n\n\n\n<li>Nakon svake dodate porcije dobro prome\u0161ati.<\/li>\n\n\n\n<li>Posle zavr\u0161ene egalizacije, rakiju ostaviti da odmori najmanje 2\u20133 nedelje.<\/li>\n<\/ol>\n\n\n\n<h2 class=\"wp-block-heading\">Tabela tabele mo\u017eete direktno pro\u010ditati koliko vode treba dodati.<\/li>\n\n\n\n<li>Za ve\u0107e ili manje koli\u010dine, proporcija se ra\u010duna jednostavnim mno\u017eenjem ili deljenjem (npr. za 20 litara vrednosti iz tabele se dupliraju).<\/li>\n\n\n\n<li>Uvek dodajite <strong>demineralizovanu ili destilovanu vodu<\/strong>, postepeno i uz me\u0161anje.<\/li>\n<\/ul>\n\n\n\n<figure
